Whenever I force touch to compose a new message, I always have three recent contacts show. One of them has shown in this menu for months now and I haven't even texted him in awhile. The other two are indeed recents. Is there a way to delete recents from this menu? Swiping doesn't do anything.

What about deleting contact message on iPhone? Maybe it will delete on Watch

That doesn't have any effect.

EDIT: actually it does have an effect. I deleted the messages for the two contacts and they disappeared from the above list. However the one for "Frank" still remains and can't be deleted even though the message has been deleted for months.
