I'd like to have more bookmarks visible vs the dropdown menu. Anyway to just have two lines of them?

Is there a way to have multiple lines of bookmarks in safari?

Not that I know of. But you can have pinned favicons which then will take up space in the Tabs bar. The only way I know of to increase the number in the Bookmarks bar is to limit the length of the name. You can arrange them any way you want, but I find alphabetically from left to right quite useful. Shorten the names, then abbreviate. You'll get used to it and have no trouble finding the one you want.
