Thread resolved....
I somehow did not notice this before, but if I go into the Bootcamp manager's preferences, I can select my default drive to boot back into Mac from; and it just so happens that my PCIe-SSD is noticed by the system.
All this time, I was getting back into OSX by doing a PRAM reset! Holy cow, I'm happy.
I hope this helps anyone else out. The PRAM resets were basically causing the Nvidia control panel in OSX to switch to default OSX drivers; and now that I have my new Pascal card, OSX drivers aren't a thing! Therefore, it was basically bricking my system. All good now, though.
