There is no authorized way to do this. I think it was lame of Apple to include a wallpaper section in settings, especially since we can't delete then. There was no need for Apple to even include wallpaper pictures because we can take our own. Of the 19 pictures included in my iPhone 3G, I only like maybe 3 of them, the rest are a waste of memory.
