When I make a call out using my phone it goes through my car's hands free Bluetooth system by default. Is there any way to prevent this but still have it use hands free when I call using the hands free controls on the steering wheel? Is there any way to prevent it period?
 
Not sure if there's any automatic way, but once you dialing a call you should be able to select audio output from the on-screen in-call options that appear and select to have it go to the phone rather than the car.
 
No unless your car specifically has controls for that.

I'm guessing you want to do this because some calls aren't meant to be heard for the other passengers?

No because I have to manually store every number I want to use in the cars hands free system and so when I look a number up on my phone in google for instance I'm dialing it from my phone.

Although the reason you mentioned is a good one too.
