Signing with Apple ID will save your info like address, purchase history, etc. Frequent shoppers will save time by not having to re-enter their shipping and billing info everytime.
Just like buying from Amazon, or any online retailers, usually they want you to create an account with them.

very advisable to purchase on the apple web store with some address/ID that allows an on-going way to prove you were the person who purchased that device - especially when/if it ever needs service, either while under warranty or not.
if you are ever unable start/turn on yr phone, and you can't present a paper copy of the original order that shows you were the person who purchased it, or purchased it from the person who purchased it, the apple genius can decide to look suspect that the phone may have been stolen.
if you have bought via the apple web store, and your transaction is therefore available always associated with your account, you will have a way to prove it is yr phone.
but it doesnt matter if its yr apple ID or an other email ID.
if your looking for some reason to hide the purchase as yours, that's another matter.
