Everytime I open a pdf or some sort of document in firefox it saves the file on the desktop. Is there any way I can just open the file without it being saved?

Yes there is. Go into your Adobe Reader prefs and fix it there.
 
This happens to all files though ie pictures, pdfs etc they get saved to the desktop. I just want to open them without saving. Is this not possible on a mac?

They will get saved on the computer if you download it, but if you have adobe reader you can set it to just open it in the same window in the browser without downloading.
 
If you're not using a plugin, you can also use the excellent Schubert-It plugin.... I personally have never installed Adobe's reader on either of my Macs. I go back and forth between Apple's plugin (which only works in Safari) and the Schubert-It one.
