I'm just curious, is there any way to upgrade FileVault's encryption to 192- or 256-bit AES encryption from the current 128-bit?

I recommend a properly designed faraday cage, independent power supply and a purpose built computer, if you want maximum security.

I'm sure you're just a paranoid, private user. Users within the military or government organizations would not asks such questions.

Btw, AES-256 is weaker than AES-128:
