I tried searching this and I guess there isn’t any way to actually Tag photos but are there any apps, or is there any workaround, that allow us to somehow distinguish pictures for search purposes short of creating separate albums? I sell furniture to colleges, and use photos on my iPad to show what we can do, and it would be great if I could tag/label pictures by style. That way I would search for “armless” or “sectionals” or “3 seat sofas” etc.

I went into my photos app today with a plant to individually tag the 1,000 or so pictures I have and was shocked to see that it is not an available feature.

You'll need to explore the app store to see if there is an app that can edit the specific metadata you need. You'll likely need the full version of the app for .99 to 2.99 ish.

I'm assuming your searches are going to be very specific considering your talking about a variety of what a lot of people just refer to as a couch or sofa. However if that isn't the case you can just use the search function and type "Couch" and it will pick at a lot of them out of your library.

You can easily edit the Title, Keywords and description on a Mac an likely a PC too right in the photos app so it syncs that data to your phone (if you are using iCloud photos)
