Is there any software out there that will let me turn my MacOS more into Windows? While I really appreciate the functionality of MacOS, even though I've been using it for a decade now as my daily driver, I still vastly prefer the file manager/setup. Something about Mac just always leaves me hanging looking for files and trying to be better organized and I can't even really tell you why. I think it's having File Explorer and a tree based system. Or maybe it's how MacOS is always trying to upload everything when I don't want it to.
 
Boot up and get to the finder.
Type "command-N" to open a new finder window.
Look up towards the top of the window and you should see the toolbar.
There should be 4 small icons with "View" underneath.
You want to try either of the "middle two" icons, to see if them gives you a finder window view you like better.

Ironically, that's one of the complaints I've made about Windows. It might interest you to know that in both macOS and Windows, you can remedy this by telling the OS not to sync your local profile data to the cloud; in fact, that's my preferred configuration for both systems. I like to have that shared cloud storage available on both platforms as a simple matter of convenience, but, like you, I don't really want all of my user profile data constantly synced to the cloud.

And a useful sidenote... both iCloud and OneDrive have cross-platform support options; by installing the appropriate add-on, you can access your iCloud data from Windows and you can access your OneDrive data from macOS. Personally, I've found that iCloud tends to be more immediately responsive than OneDrive... but that may be specific to my locale. (YMMV and all that.)
