Model: Apple Watch Ultra, watchOS 9.1

Screen Display: Always on
Raise wrist to wake: Off (to conserve battery)

Notification behavior wanted: When a notification comes, only show the app icon but not the content (eg who is texting me and a preview of the text). Apparently the “tap to show full notification” option does that… but it completely hides the notification when wrist is down with always on display active!

I’m not looking for anything complicated! I just want to glance at the watch to see which app sent me a notification and not having everyone around me see it’s content. I can’t believe there is not a way to do this!
 
That's because when the screen is on AoD mode it only shows a simple time, nothing else from what I can see. So if you don't have Raise to Wake enabled then it won't show you anything when you glance at the watch because you turned that feature off.

No you're wrong... Let me explain, with AoD display on and raise to wake off, I can get full-screen notifications to pop when wrist is down, but I can't find a way to do it with hidden sensitive info! They only pop with public info, which makes absolutely not sense!

What’s the lowest remaining battery percentage you’ve ever seen on your Ultra? How low does it regularly get?

And, how often do you charge the watch?

I work in a professional kitchen and there are much more benefits in having raise to wake off and AoD on for my case of use... (I charge my watch every 36-48 hours or so)
 
Does 'Tap to Show Full Notification' not work for you? It seems to do exactly what you want - it is in the watch app under notifications.

When the watch is on AoD, 'Tap to Show Full Notification' only sends a vibrate on your wrist. You have to wake up the watch manually and then tap again to view the notification... Not useful at all!

When 'Tap to Show Full Notification' is off, the watch displays the notification on the AoD with all the sensitive info you don't want to be seen... Not useful at all!

It’s “Always-On-Display,” not, “Always-Active-Display.”

The only technical way for the display to be on all the time without the battery getting sucked dry (at least, with the current state of the art) is for the display to be in a super-low temporal resolution mode. As in, it’s on, sure, but it’s not actively updating save once in a blue moon.

You’ve explicitly told the watch that you don’t want it to activate unless you tap it. But it needs to be active to … well … actively do anything, like show something.

And, of course, if you turn off “Tap to Show Full Notification,” it’s going to show the full notification even if you don’t tap it. That’s the whole point of that setting!

In short, you’ve told the watch to not show anything unless you tap it, and you’re upset that the only way for it to show you anything is by tapping it.

We’ve established that you’ve got more than enough battery that raise-to-wake isn’t causing you any problems; now it’s something vague about working in a kitchen? I’m sorry, but I’m having a difficult time imagining how having your watch get a bit brighter is in any way a distraction in the kitchen. Indeed, considering how much I personally use the watch in my kitchen at home (lots of Siri, like setting timers or doing unit conversions, all hands-free), I’m even more confused.

Then there’s the other point. You’re in a setting where you’re worried about people seeing your personal / private business on your watch. But you’re also checking your personal / private business in this same setting. That just doesn’t add up … if you’re in the sort of work environment where you’re so close to your colleagues that they can (and would!) read your notifications on your wrist, where even the act of tapping your wrist to see who it is is too much of a burden … why on Earth aren’t you using a full-on “do not disturb” focus mode? And how can you justify taking a break in the middle of the action to see who’s texting you?

I’m sorry, but nothing’s making sense here.

Sorry your whole reply does not make any sense. I'll try to make it really simple for you.

This is how my watch behaves at the moment:
(A) When I get a new iMessage I get the pop up on AoD 'New iMessage from Tod: blahblahbah... (text preview)'.

This is how I WANT my watch to behave:
(B) When I get a new iMessage to get a popup on the AoD 'You have a new iMessage'.

Switching from (A) to (B) is NOT POSSIBLE. This is an extremely stupid design choice by Apple. Am I really asking something that crazy? I don't get why you're beeing so offensive towards me.

The only way to get private notifications like option (B) is to turn on 'Tap to show full notification' which makes all notifications invisible when wrist is down.
 
The notifications have been that way ever since AOD has been offered on the AW. Not sure if this your first AW but if it is it's too bad you've found something that hinders your enjoyment of the device. You can also submit feedback to Apple with your suggestion for how notifications are displayed which is really the only option for you at this point.

Prior to watchOS 9 this actually worked how OP described. You would see a “summary” when wrist down, and then when you raised your wrist it would show you the content.

In watchOS 9 there seems to be no combination of settings to do this without you having to actually tap the watch, seems absurd.

Exactly this. Really disappointing it was removed in watchOS 9.
