Just wanted to get some insight on this. Do you think it would be a good idea to sell my iPhone 5S when my contract is over, and get a 6+ on contract; then use it for a few days to see if it can replace my iPad mini. Then if I don't like the 6+ I can return it within the return period and I'll still have the iPad if I don't like the 6+.
What do you think? Sound like a good plan?

Sounds OK, as long as there is no (or significant) re-stocking fee for returning the 6+.

FWIW, I have a 6+ and a Mini, and could get by with just the 6+ but prefer to use the Mini whenever I can (at home). If its a financial reason I could see selling the Mini and using the 6+ only, but only you can answer that.
