I noticed, when selecting text in email, it give you an option to format the text. It only gives you option for Bold Italic and Underline, as well as a nifty tool to decrease and increase Quote Level.

I use mail a lot, but i never noticed this before. Is it new?
 
Yes.

Scott Forstall demoed that feature on stage at WWDC and it's also featured on the promo video Apple has on their front page for iOS 5
 
It's a shame that people who don't have an iPhone won't be able to see the beautiful formatting. Oh well, I guess the commercial was right: If you don't have an iPhone well....you don't have an iPhone :rolleyes:

Formatted text will appear in most mail clients, including web-based email clients. I don't get why you think formatting will only be visible on an iphone.
