I have an Xbox 360 and i want to stream music and videos to it, but i dont want to have a PC running in the house just for that, if i setup windows xp media center in a fusion virtual machine, on my mac, and dump all my videos and music in there, will the 360 be able to see that and grab the media?

That should work. Fusion might need to have it's network set to Bridged mode.
 
You may not even need to go to the trouble of setting up a VM for it. There is an OS X application that I believe does this called "Connect360". I don't have any direct experience with it as I don't have a console but they do a version for a PS3 and I have a friend with one who used that.
 
Watched a movie with this last night, I had encoded the movie with handbrake at the 360 setting,
and it looked great and worked pretty well over the network, but i had 3 spots in the move where it just paused for a bout 5 sec, guessing that my g wifi was not quite keeping up.
anyone else have this problem?

also it seems that you can only have movies in the movie folder for them to be shared with the 360, i have all my movies on an external drive, is there anyway to point this to that? so i don't have to copy a movie to the local drive before i watch it?

Normally just making an alias of the folder on your external drive and placing that in the local movies folder will work.
