My iPhone 4S was delivered with iOS 4.
I have upgraded to iOS 5.1

I want to delete absolutely all things on it, and have it to be as fresh and clean as it was when new. (I am having technical difficulties getting an identification service here in Norway started, and have received a new SIM-card today and want the phone "blank" before I start using the SIM-card).

I have tried the standard:
Step1- Go to “Settings” and click on “General”
Step2- Move down to the bottom and click on “settings”
Step3- Click on “ُErase all content and settings”
Step4- Tap on the passcode of your device and then choose “erase iPhone”

After doing this the phone starts up as a new phone, with iOS 5.1.

Question 1:
-Is it normal that it doesn't go back to the original iOS (iOS4) ?

Question 2:
Are there better, more thorough ways to clean the iPhone?
