Also when you connect ethernet cable while on wifi, does it automatically start using the ethernet for internet, or do you have to turn off the wifi as well?
 
Gigabit ethernet is faster than any wifi in benchmarks. However, the source of the information (example: internet) has to be fast enough to benefit from the extra bandwidth. By default, if you plug in an ethernet wire, it is the top choice for OSX to use for networking.

It depends on how you have it configured. If you want it to use ethernet as opposed to wifi when you connect via ethernet go into the network pref pane in System Prefs and click the little cog at the bottom and pick Set Service Order then drag the ethernet to the top and save the change.
