Very simple question but i just can't find out how to do this in word.

How do i change the settings so that when i type a word such as dont and cant it will automatically insert the apostraphe?

If memory serves me That's in the auto-correct section. I'm not on the my Mac right now so I can't tell you exactly where to co but look for auto correct Options.

In the older versions of Word it was in the Tools menu.
 
If you open Word, and go into the Preferences... (CMD + ,), select the AutoCorrect panel.

From there you can add words that you want specific replacement for. I'm surprised that cant --> can't isn't in there already.
 
AutoCorrect

In the Tools menu select AutoCorrect and you can find the following window, fill it up with whatever you want
