Basically, my recovery mode always starts with international language selection, before I did this it would give options of European languages only I believe, nothing like the above photo, so it would auto select British / English (UK) automatically each time, don't know why its not doing this now? How can I wipe this so it does not do this? I already tried: https://support.apple.com/en-us/HT204063 and this did not fix it, I have been advised it should be picking up the standard of my device and keyboard as to where and what I purchased. I purchased it inside the UK officially from Apple as a new product. From the below image you can see it has a British Keyboard.
