How do I add my mac to the iStat app on my iPhone so I can monitor it? It asks for an IP which I can get and a display name (optional) and a Port. What do I use for the port?

You need to run iStat Server on your Mac, which will start listening for connections on an port that it will identify to you. It's available for free from the iSlayer website; the guys who make iStat.
