On a 27" iMac when using Adobe apps (and not only) everything is so small, from application font sizes to the text on the application menu tabs etc. is there a way to bypass this issue? Perhaps be able to enlargen the font sizes used there so they will be viewable. Also the tools look very small, any solution regarding that?

With Adobe Photoshop you have the option to make the fonts bigger:

thank you very much. its just that in photoshop this issue looks as if its not changed anything... how can i change this?
Did you restart the application? I surely got bigger fonts on tabs and such when doing so on my 17" MBP with its 1920 x 1200 pixel.

Yes it does work, but to be honest i wouldn't mind if they were a little bigger! Other than phsop, what other Adobe CS5 apps (illustrator, indesign etc.) have these features?
