I've been using Macs for almost 30 years and have been a huge fan. But it seems with every new release something unnecessary just drives me nuts. e.g. My brand new iPhone; every time I launch music it asks me so sign in to the iTunes store. If they think I going to buy music every time I turn it on, they are dreaming. How do I turn that off?

That doesn't happen on any iDevice of mine.
Something's wrong in your settings
 
Have you tried signing in? It's not asking you to buy something. It most likely just needs to get more information about previous purchases. Once you sign in it probably won't ask you again for awhile.
