iTunes 11.4 Question

When you import a CD, you can use the "Join Tracks" button. However, I already have an audio file within iTunes that has nine tracks that I would like to join into one. How do you do that, using Vers. 11.4?

Secondly, I want to put the audio bible I have in iTunes. Each book, with all chapters, is in it's own folder. I would like to "consolidate" as much as possible. How would you recommend I configure them within iTunes?
