iTunes 11: How to shut off iCloud?

I keep deleting music I used to have but no longer want but iCloud keeps re downloading it. Is their any possible way to shut it off or delete the music I don't want off iCloud?

try the option in preferences/store

show itunes in the cloud purchases

I turned this option off and now see no sign of anything to do with the cloud
