I hope we see an update soon. This is the buggiest iTunes release in a long time, though the kernel panics it regularly caused on my iBook back in the Panther days were much more of a headache.

I don't have problems with crashing, but iTunes 7.0.1 is painfully slow. Importing files as Apple Lossless from a CD rip at something like 4.5x -- it should be about 40x. Editing tags gets me beachballs and all sorts of sluggishness, and browsing through album art in a single file means long hangs. Plus it still doesn't recognize the drag-and-drop adding of album art the way v.6 used to. I like some of the changes, but they're not enough to outweigh all the bugs and hassle.
 
I had the same problem on my Powerbook. The crashing issue was solved by removing all the scripts that I had installed (LAME Encoder, FetchArt, and others...). I haven't figured out which extension caused the crashing, though.
