I searched and could not find a thread on this already in the forum. I looked in the latest version of iTunes last night for a good 10 minutes for a way to convert an AIFF to an mp3. Looks like they have done away with this feature after it had already been possible for years! I had to install iTunes 7.7.1 to convert my AIFF files. I'm sure there are other 3rd party apps that do this, but this is ridiculous. Why take away more useful features?!
 
It is possible, it is just that with iTunes 8 the reworded the convert and changed the preferences around a bit. To do it follow this:

iTunes - Preferences - General - Import settings - MP3

Then select the AIFF and go Advanced - Create MP3 version.
