Itunes 8 missing convert tracks to mp3 option

In preferences you could choose which format itunes converted your library too. This option appears to have disappeared. Any ideas please?

I depend on iTunes for a community radio show I do. Apple seem determined to hide the mp3 option as deep in the system as possible in iTunes 8!
