So, I haven't heard anything but will we be able to go into the Apple Store and buy a 3G S and activate at home, just like the 2G?
 
No, you will have to activate it before leaving the store.

How would you have to, they aren't going to make all the people who are getting their phones shipped bring them to a store once then get them.

Also if there smart, they should make it like the 2g, in and out of the store in 5 minutes

That wasn't the OP's question. Read again.

In the U.S. Apple Stores, you will have to activate at the store before walking out with a phone. For those receiving iPhones at their home, they can activate through iTunes.

Guess I'll buy online then. Seems kind of silly to require activating upon leaving.
