I have a few songs that I do not want the album art because it is not correct as I downloaded the song from youtube. Each time I delete the album art, it does not stay that deleted and still shows on my phone (use iTunes match). Is there a way around this?
 
I know exactly what you mean. It's because there is a copy of the artwork in the cloud.

Theoretically if you delete the artwork from iTunes on your computer it should update the cloud and then removed from your other devices. In practice it never works this way. In my case I delete the artwork on iTunes and then next time it does a sync to the cloud it just downloads it again. I have tried all manner of tricks (including removing all other devices from Match) to force iTunes to update but whatever I do iTunes sees iCloud as the master copy.

I have found the only sure fire way to force an update is:-

1. Copy the file to your desktop (or wherever, just outside of your iTunes folder).
2. Make any changes you want to the file on your desktop.
3. Delete the song from your local machine and iCloud.
4. Wait for iTunes to update the cloud.
5. Re-add the song as if it's a brand new one.
