iTunes and 2 iOS devices

If I use the "Convert higher bitrate songs to 128/192 AAC" option in iTunes with my new iPhone and then I plug in my iPod Touch, would iTunes convert the songs on my iPod touch to 192/128 or would I keep the 320 quality?

That setting in iTunes is per device, so you can have it convert on one and not convert on the other. When you attached the device to iTunes you will see the setting in the Summary tab for each device.
