Quick question,

I want to put all my music on an external hard drive with a mba and sync it to my iphone. My question is if I'm traveling without the hard drive and I want to sync my iphone, will itunes not detect the HD and remove the songs from my phone?

As a follow up to that, again without the HD, and I download an mp3 off of amazon while on vacation, will it let me add that mp3 to my iphone without removing the previously synced mp3s?

No, as long as you don't remove the songs from the iTunes library itself (i.e. the songs marked with "!" symbol)

If you want to manually add songs later:
1. In iTunes Preferences, go to Devices and check "Prevent iPods, iPhones, and iPads from syncing automatically."
2. In iTunes Preferences, go to Advanced and uncheck "Keep iTunes Media folder organized" and "Copy files to iTunes Media folder when adding to library."
