Ok, so I transferred over all of my music/videos and photos to my new MBP....why when importing all of this does iPhoto and iTunes make duplicates? I dont understand...well which one (original or duplicates) can I delete?

iTunes and iPhoto make duplicates of everything!!!

By default, iTunes and iPhoto will copy the files into their library file structures. If you let them manage the actual files, you can safely delete the original ones you imported.
