I must be missing something apparent here.

I can't seem to sync my audiobooks to my iPhone 4.

It seems to be able to sync books that are in PDF, but not audiobooks?
The audiobooks exist in my iTunes library, but they don't sync when I go to my device in iTunes. In fact, they don't even show up as selectable books.

If I'm not making any sense, that's okay, I've uploaded a video of my issue.

My iPhone clearly has an audiobook section in the iPod app, so what am I doing wrong? This issue has been persisting for almost a year now (through various software updates), I've only now bothered to post it on the web.

(I'm running the latest firmware on my iPhone, latest iTunes and Lion on my Macbook pro)
 
In the context of your query, the video is meaningless - your 'phone is not connected.

I assume you have set up your iPhone to sync Audiobooks?
 
Really appreciate the reply! Sadly I'm not sure what you mean..

My phone was connected in the video (note the sidebar to the right). I even enter its' tab and select the books section.

The phone does have an unusual name (Time Dilation Apparatus) though!

Am I misunderstanding something critical?
What specifically needs to be set up in my phone to sync audiobooks- do I have to select an option or something?
 
Ah! Time Dilation Apparatus fooled me!

I'm afraid I can only suggest you try reinstalling iTunes. On mine (v10.4), I have an extra heading "Sync Audiobooks" below the "Books" section.
 
Here is what I had to do.

I was not able to synch audiobooks to my iPhone or iPad until I went to the summary page, under the options section and unchecked "Sync only checked songs and videos". Then audiobooks started to sync again.
