I have had my jail broken ipod touch since last tuesday, and I just plugged it into itunes and it said that it can't read the files. It only shows the summary tab in itunes. Everything was working fine up until now. I just jailbreaked it again and it still isn't working.

Looks like four flash file system gone broke. I had same thing and my ipod is not JB (propebly my cable disconnected who;e syncing). Aside of this my music and videos was unaccessible on iPod it self.
Factory restore (triggered on iPod) helped, ofcorse data has been wiped add needed to upload whole music again. I hope you got settings archived on iTunes ;p
