I did a search of the forum for this but i couldn't find this exact situation.
I'm in Canada now but in the coming months i will be moving overseas, will my iTunes simply change to that countries store?? Im "assuming" that the client is pretty much universal and they just have some ip region checking scheme going on right?
 
Nope - not unless you change your billing address. It's not IP-based, at least currently.

To be honest, your best bet is to keep your current ID (with a little credit) so you can get that store's free singles of the week or anything else you fancy - and in case you move back - and start a new account for the new country's. It will remember the last store you were logged in at when you closed iTunes... and your iPod can cope with up to 5 different iTunes IDs for playback.
 
I use both a US and Aus accounts here - works fine. You just sign out from one and sign into the other, everything is kept up to date.
