What are the advantages of adding a new user to iTunes Connect? If the user uploads an app via his / her "sub account", will his / her name be displayed as the seller's name?

What are the advantages of adding a new user to iTunes Connect?

Adding users allow you to delegate certain responsibilities to other users within your company account. See the iTunes Connect Developer Guide (paid devs only) for more information. It's up to you to decide if, based on the roles available, you need to add users.

If the user uploads an app via his / her "sub account", will his / her name be displayed as the seller's name?

No. The Seller Name is fixed and based on the legal entity that contracted with Apple.
