Basically what the title says, as soon as a disconnected the iPod, iTunes goes back to normal and the spinning beach ball thing goes away.

any ideas?

You have no idea what the OP is saying. They're saying that iTunes totally freezes when the iPod is connected, so no music can be played and no syncing can occur (if you have never used a Mac, the "spinning beach ball" they refer to is what the mouse cursor turns into when an application has frozen, much like the hour glass used in Windows).
 
I have the same problem. Whenever I plug my ipod touch (second gen. 32gb) into my computer (new macbook pro fully updated) itunes crashes. Anybody know of a fix?
