iTunes creating playlist of Videos

Hello all, I have a long list of home videos sorted into folders on a hard drive, when I move those videos to iTunes so they can be played via Apple TV iTunes auto sorts them by name, or file number; how can I keep the videos sorted by playlist or by folder so I don't have to scramble to find my videos?
