I connected my iPod up to iTunes 8 this morning and it asked me if I wanted to retore it... it had been working fine the previous days. I didn't hit anything, but it proceeded to restore my iPod and eventually erased everything on it.

My question is: Is there a way to restore eveything on my iPod that was there this morning?

If iTunes made a backup of your files, when you restore you can restore to the previously backed up version.
 
Your songs on the ipod are forever gone. If you never did a backup of your songs, there is no way to get them back. Itunes does not automatically back up your songs, you have to back them up yourself.
 
Once it does a restore, everything is wiped out and the iPod is returned to factory settings. It should then sync with iTunes and transfer all the music you have in there back to your iPod.
