I click on the iTunes icon in the Dock and it bounces once, the carrot shows up underneath it, and it stops responding and I have to force quit it several times to get it to close.

Is there a log or something that I can look at to see what the problem is?
 
Console in the Utilities folder should have a log for you under it's CrashReporter heading, although I doubt it'll be terribly legible. A good first step to try when an app starts playing silly buggers is to create a new user account in System Preferences and see if the problem carries over to that account. If it doesn't then you can almost certainly assume your problem is contained in the original account's Home folder. :)
