Is this a good bit rate quality? I'm trying to find a match between file size and quality. I can't really tell the difference between 192 and 320 so I've always basically kept my stuff around here....but I just recently discovered the VBR function in iTunes so thinking of going with this:

Why are you using MP3? Change to AAC (mp4) for better sound at the same bit rate. It is noticeable better with less artifacts

And yes, VBR sounds better for the same bit rate. VBR lets the encoder place the bits where they do the most good.

Disks are noe so cheap. $100 buys a 1TB drive that you may as well use lossless format. Maybe you can't hear the difference now but some day you might buy better equipment and if you listen enough your ears get better. If this happens you will have to re-rip to lossless. May as well save the hassle and do lossless now. From lossless you can create any other format you need.
