Bought my wife a MBP

is it possible to copy the 'iTunes Music' folder from her PC

Reformat the iPod for Mac

and then put all of the music back on the iPod

does this work?
Is this the easiest way

Yes, this is the easiest way. If this iPod has a large HD, then simply drag your iTunes library (probably my documents/my music/ itunes music) to the iPod. Then plug said iPod into the MBP and open iTunes. Then drag said folder to iTunes. Or, you can open iTunes on Mac, and say File-Add to Library. Then select the folder containing your music. After it's done copying, restore your iPod to sync from the Mac. Obviously, authorize her computer to play purchases if you've bought any.
