iTunes keeps freezing. It does not take down anything else with it. This happens eventually whenever it is running and force quit will not make it quit. Any ideas?

Try posting what it is doing when it freezes, what other programs you're usually running, age of your Mac, how much space is left on the hard drive etc etc.
First thing I'd recommend now is to repair disk permissions in Disk Utility.

Mac mini
2 GHz processor
2 GB ram
120 GB internal hard drive
iTunes music is on an external 1TB Western Digital hard drive
Adium, Address Book, Mail, and Safari are running

Western digital external 1TB drive also does not show up when I start the computer. I have to unplug it and depower it and plug it back in to get the mac mini to recognize it.
