For some reason my iTunes started to launch automatically by itself. I don't even have to be using the computer and i'll come back and itunes is running. I've tried to reinstall and uninstall but nothing has helped. My iPhone isn't connected at the time either.
 
I have the same problem on my Windows computer. Just go to the task manager and close the iTuneshelper process and it will not start on its own (at least until you restart your computer). I haven't looked for a permanent solution though.

Do you have wireless sync turned on? If so, it is probably launching when your iPhone is syncing
 
It happened to me when I had my phone and my wife's phone on WiFy Sync...

...I just disabled the option and now iTunes doesn't launch by itself.
 
I think it was the itunes helper issue. I didn't have wifi sync turned on. I will see if that does the trick, so far so good.
