So, I've already started converting things that are obvious contenders (e.g. old 128Kbps iTunes purchases). The thing I'm stuck on is, what to do about the music I've ripped from my personal CD collection?

Everything I've ripped from CDs is 256Kbps VBR, using LAME encoder. I don't know that this is a cut-and-dry type of question, but which could I expect to give me better quality? My rips, or the stuff from iTunes that is assumably ripped using more advanced, studio-quality means?
