Is there a way you can listen to iTunes Match music through the watch rather than downloading music onto the watch?

Not at the moment. Maybe in the future? I wouldn't count on it though as having to download music from the cloud to the watch directly would take a huge battery hit. It already barely charges while syncing music from the phone.

You can't even play music through the internal Watch speaker. You need to pair some bluetooth headphones to play anything from the Watch.

Hopefully you have the headphones paired with the phone for playing music. That would be an excessive drain on the watch's battery for playing music.

Ideally, you just use the watch for controlling the music on your phone (including match and iTunes radio).

You can already do that. And people use the watch to play music independently from their phone, like during a workout. Bluetooth drain is minimal and your watch bluetooth is already always on because that's the way it communicates with your phone.

I have used the Watch to stream when working out. Uses some battery yes but not excessive.
