When backing this up, is it best to backup the origional (eg m4v) video file(s), or backup the one with edited medadata (e.g. if youve addded tags (movie info. description etc, in order to display them on ATV)).. ?

Backup the one that you would want to have if you were to lose your hard drive.

Why do you have 2 copies? You should get down to the 1 copy iTunes uses with the metadata and save that one to your external, or whatever. Also, save you library file so you don't lose playlists n stuff!
