Damn, it's annoying. My 2 week old iPod Touch seems to freeze iTunes when i plug it in via USB. This is the latest iTunes and Touch. Just get the beachball of death. Anything i can do? If i do a full reset do i lose all my data and downloaded stuff?

Try a reinstall of iTunes (you will not lose your songs, videos or apps.). Most often, I have seen this resolve the issue.
Try to reset the iPod (Hold down the Home and Sleep/Wake buttons together for several seconds until you see the Apple logo).
If those don't work, then you can try a full restore of your iPod, which I hate to recommend because yes, you will lose all of your data. The good thing is you can sync all of that data back from your computer to the iPod afterwards.
