iTunes Not Storing Backups?

I'm asking here because I really cannot figure this out. I've backed up my phone nearly 20 times since I received my iPhone 4, including about 3 times since August 1st.

I just checked my back ups in iTunes>Edit>Preferences>Devices and it says my last known back up is from July 21st. Which is a day before I received my iPhone 4.

What's the deal here? I've jailbroken my iP4 and I'd like to update my iPhone and use a back up...but not from July 21st.

Any ideas what's going on?
