So, apparently we will get an option to enter our PAC codes in itunes during activation, but if so then do we still have to call customer services to see the number port administered, or will that do it automatically?

I assume also that the number assigned to the phone will activate until the number port goes through?

Correct. Your old number will take up to 5 days to transfer.
