I am trying to help a friend with his new iPhone. His iTunes backup from the old iPhone 11 128GB is 109GB and I am trying to restore this backup to a new iPhone 12 pro max 128GB. ITunes is telling a not enough space error?
The iPhone 11 is sold already.

It doesn't fit. Need a 256GB iPhone.
A 128GB iPhone doesn't have 128GB of free space on it.
While the backup might show 109GB and apparently it could be jammed into the iPhone 11, an install of an OS from backup needs some breathing room to accommodate the existing OS and the old one until the installation is complete

Is there a way to restore anything from this backup via third party software?

The only way I can think of at the moment is to install this backup on any iOS device that will take it, then trim it way down to a much smaller size by deleting a lot of cruft, then back up that device, then restore your new iOS device from that smaller backup. Pretty crude method.
